Honey and thyme baked figs
Does what it says on the tin. A great weekend breakfast.

Ingredients
3 fresh figs (halved)
2 sprigs fresh thyme
A drizzle of runny honey
A pinch of milled flaxseed to serve
Method
Turn the oven on and up to 180°c.
Place the halved figs on a baking tray, drizzle with a little honey and scatter fresh thyme leaves evenly over the top.
Bake in the oven for 15-20 minutes or until plump and jammy.
Serve on a bed of Greek yoghurt with fresh blueberries, another drizzle of honey, a few thyme leaves and a pinch of milled flaxseed.
TIPS
If you don’t have flaxseed, use any kind of breakfasty seed you have knocking around or try crumbling up a couple of pieces of granola.
Switch the thyme for a generous pinch of cinnamon for a completely different vibe.
