Chia seed pudding

Inspired by a Pret a Manger breakfast cup that I’m not sure still exists, I wanted to re-create this lovely, healthy and fresh tasting combo for weekday breakfasts without spending so much on a tiny cup. There’s so little to it, calling it a ‘recipe’ is even pushing it to be honest.

Really tasty, something a bit different for breakfast and can be done practically with your eyes closed.

It needs to go into the fridge the night before you plan to eat it.

Ingredients

½ cup chia seeds 

400ml coconut milk 

100ml apple juice 

Fruit to serve

Method

Get hold of a large empty drinking bottle or tupperware container - anything you can seal and give a good shake. Put the seeds, coconut milk and juice into the bottle, do it up tightly and give it a strong, rigorous shake. Pop it in the fridge overnight.

The next morning, give it a little shake or stir. Your chia seeds will have become almost jelly-like.

Serve with chopped fruit, a small drizzle of your favourite syrup or honey and voila! As easy as pudding.

TIPS

  • My winning fruit combo: finely chopped kiwis and mango, some pomegranate seeds and some big ol’ blueberries.

  • You can use coconut yoghurt instead of milk and you won’t need to wait quite as long for the seeds to soak into a jelly-like consistency.
